Also known as guaran, guar gum is basically a galactomannan
and is the ground endosperm of guar beans. The powder is white or off white in
colour, odourless and is obtained after the seeds are de-husked, milled and
screened. India is the top producer of this powder.
There are many processing techniques which depend on the
requirement of the end product and come in different viscosities. It has the
property of being cold water soluble which allows it to get hydrated without
heating. This is an advantage as this property makes it very useful in food
and industrial applications.
There are two types of guar gum powders available in the
market. These types depend on active matter content, granulation, pH, viscosity
and degree of substitution. They are food grade and industrial grade powders.
Food grade powder is used in food such as frozen, baked, sauces, salad, dairy
preparations, confectionaries, beverages, even pet food products, cosmetics and
even pharmaceutical applications where as industrial grade powder is used in
paper, explosive, mining, oil drilling industries, etc.
This powder is used as a thickener too as when added to a
mixture, the viscosity is increased which in turn provides body, stability and
suspending action is also improved. They are often used as food additives as
they do not modify its properties such as taste. Other than these, they are
also used as emulsifiers, bonding agent, stabilizer, hydrocolloid, gelling
agent, soil stabilizer, flocculants, natural fibre, fracturing agent, etc.
